A few suggestions

-Observer chat (with other observers)

-Forum moderators (not a problem yet)

-A type of game where it could be rated or not like it used to be (depending on the accepter's preferences)

- Time against the computer (I enjoy playing bullet games against the computer on occasion)

- Maybe a practice game against the computer where the human can take back his move if he wants (I think windows 7 chess has this)

Nice feature

-It would be a nice feature non ranked games against non anonymous players - now, If I put non ranked, anonoymous enter by accident and gave up early

-Time feature is simple, I think

-Undo move, against non AI players, if agreeded, is ok, because mouse errors.
Also, comment count and avatars for the forums would be nice
New suggestion: ask your opponent for more time option.

Perhaps you could make feature which displays the average amount of time thinking about a move per game, and overall. Just an idea. I am quite curious how long it takes me to move, but I am too busy
to keep track in the middle of a game.
As far as I know you can check the time per player after the game is finished.

Im not exactly sure if thats what you want but thought I would say it.
You can do it during the game by refreshing your tab, and then clicking on time stats
I still think that a public chat in the waiting room would be good.

It would allow people to talk instead.
Its more convienant then pming (some people do this).

Now sure there would be spam. Maybe restrict it to registered users or with a few moderators the spam would be a smaller issue.
